The Consortium was established thanks to the initiative of the two owners of the farms, Il Monte e Le Balze, both dedicated to organic farming and to olive oil quality.
Olive Farm Il Monte di E. Mercuriali
Dedicated to the production of oil, Il Monte is located in the hilltop community of Cittá della Pieve, the Renaissance town situated 550 meters above sea level overlooking the Val di Chiana.
The company was founded thirty years ago and is managed personally by the owner Eros Mercuriali. The land is on a south-facing slope with the groves divided between two locations: Il Monte on 12 hectares (30 acres) with 1900 olive trees and Canale having 3 hectares (7 acres) with 600 olive trees. The farm’s Moraiolo, Leccino, and Frantoio olive trees are typical of Il Monte and are grown organically, without the use of pesticides or chemicals which are banned by the certification authorities.
Within 24/48 hours of harvesting, the olives are processed in the consortium’s mill by the traditional method of cold pressing.
The oil is then left to settle naturally (so that the organoleptic properties remain intact) in steel containers and, in April, is bottled. The colour of the oil has a color ranging from green to golden yellow and a fruity flavor with a medium spicy tanginess.
The Olive Farm Il Monte di Mercuriali is part of Consortium for safeguarding extra virgin olive oil in Umbria, called D.O.P. Umbria.
Olive Farm Le Balze Soc. Semplice
L’Azienda Agricola Le Balze was founded in 1986, on the North side of the mountain Pausillo in the village of Paciano (Perugia province), a small medieval village ranked among the most beautiful villages in Italy.
Le Balze, headed by Gianluigi Matturri, has 10,000 olive trees typical of the area: Moraiolo, Leccino, and Dolce Agogia and has an annual production of 170 to 180 metric tons of olives.
In line with the biological purity in plant breeding, L’Azienda Agricola Le Balze applies the same care in processing the olives. During harvest, which runs from October 20 to November 30, the olives are delivered to the mill within 24 hours to avoid the possibility of fermentation that causes acidity.
The oil produced from L’Azienda Agricola Le Balze has a delicate flavor with the hint of artichoke and almond.
